There is a lot of information about AM and FM on the web. Be sure to include "music" in the keywords if you do a google search, because much of the material has to do with radio transmission and encoding. Here are a couple of links that I thought were informative:
• Additive Synthesis, Amplitude Modulation and Frequency Modulation -- pretty decent explanation of AM and FM synthesis (and additive synthesis, not relevant to our class). Signal-processing is done by replacing the carrier with an external sound source. Written by Eduardo Miranda.
• Amplitude Modulation chapter -- from the on-line book Music and Computers: A Theoretical and Historical Approach co-written by Douglas Repetto. Nice examples included.
• Frequency Modulation Chapter -- from the Music and Computers book.

• Stria -- John Chowning's breakthrough FM synthesis piece, from 1977 (this is the "short" version). Available on the CD John Chowning: Turenas / Stria / Phoné / Sabelithe.
  
  
• Cross-Collateral -- by the German fusion-jazz group Passport, available on the CD Cross-Collateral. Ring modulation on the electric piano starts at about 11 minutes in.
  
  
• Pull It -- guitar ring modulation from Jeff Beck's latest CD, Loud Hailer. Oh yeah!
  
  
• AUG-2016-montue-PGT2 -- improvisition from our (me, Terry Pender and Gregory Taylor, PGT) August 2016 recording sessions. Some subtle AM starts about 11 minutes in.
